The European Directive 2003/89/EC includes mustard as a declared food allergen, and as such, it must be included, where applicable, under the appropriate labelling laws regarding food allergens. Mustard is widely used as a flavoring agent, as well as for its texture-enhancing and emulsification capacity in various food preparations, particularly with salad dressings and meats.

Two common and closely related species of mustard seeds were used in the development of this assay: White Mustard ( Brassica alba, sometimes known as Sinapis alba or Yellow Mustard) and Black Mustard ( Brassica nigra). The assay has been shown to detect the seed proteins from these species, as well as seed protein from another mustard seed: Brassica juncea (Brown Mustard).

All results should be interpreted as part of a HACCP plan for food allergens. Any sample returning a positive result should be regarded as a presumptive result, and confirmation or further testing should be performed.
