Brettanomyces is responsible for the presence of 4-ethyl phenol in wine, juice and high sugar beverages. The presence of Brettanomyces may affect S. cerevisiae fermentation and can impact the color, odor and taste of the produced beverages, leading to bottle recalls, production shut down, damage to brand reputation and loss in consumers' confidence. Maintaining the high quality of each product starts with regular monitoring of environment and early detection in semi-finished and finished products for a rapid cleaning action.
